Vegan Borscht

Whenever a storm is coming your way, this Veganized recipe of the Borscht, a delicious Ukrainian soup, will make sure to keep you warm!

You can be creative when it comes to the vegetables you add to the borscht, as long as you keep the beets that give it the famous red color.
Ingredients

Ada’s Vegan Labneh
– 3 red beets
– 3 carrots
– 3 potatoes
– One small onion
– 1 teaspoon of olive oil
– 1.5 teaspoons of caraway
– 6 cups of vegetable stock
– 1 teaspoon of white vinegar
– Salt
– Black pepper

Recipe
1- Peel the beets, carrots and potatoes and dice them into small cubes.
2- Thinly slice the onion.
3- In a large pot, heat oil and sauté the onions for around 7 minutes on medium heat.
4- Add Caraway and mix for around an additional minute.
5- Add the diced vegetables and keep mixing so they combine with the oil onions and caraway.
6- Add the vegetable broth, stir for around a minute, then close the lid and allow it to boil.
7- Once it starts boiling, reduce the heat and let it simmer for around 20 to 30 minutes.
8- Add salt, Pepper and White Vinegar.
9- If needed, thicken with corn starch or tapioca.
10- Pour Soup in serving bowls and add a Teaspoon of Ada’s Vegan Labneh on top of each.
11- Serve Hot.
