Vegan Labnieh

When we were kids, we used to impatiently wait for the days we visited our grandmother’s place for lunch, hoping she’s be making her delicious labnieh. And this, is a vegan version of it.

Extra Tips

For a Gluten Free Version, Replace the flour with Oat flour or Gluten Free Flour, and the Burghul with Quinoa.

Feel Free to omit the garlic if you want a lighter version of the Vegan Labnieh.

Ingredients

–  200grs Ada’s Vegan Labneh
– 1/2 cup of Egyptian Rice
– 1 crushed clove of garlic
– 1 1/2 cup of Burghul
– 1 cup of Flour
– 2 Medium Boiled Potatoes
– Dried Mint
– Cumin
– Cinnamon
– 7 spices
– 1 small thinly sliced Onion
– Salt
– Olive Oil

Recipe

1- Mash the Potatoes in a bowl and add to it the Flour, Burghul, Sliced Onion, Cumin, Cinnamon, Dried Mint and Salt.

2- Mix well and with the patty you get, start forming hollowed oval shaped Kibbeh and either fry them in Olive Oil or lightly brush them with Olive oil and bake them in the oven.

3- In a pot, put the Egyptian Rice with one cup of water and let it boil till the water evaporates.

4- Thin 200grs of Ada’s Vegan Labneh with around a cup and a half of water. 

5- Add the thinned Labneh to the pot of rice and let it boil on medium fire.

6- Add the Mint and crushed clove of Garlic to the Rice and Labneh mix and keep stirring till it starts boiling.

7- Add the fried/baked Kibbeh Ovals to the pot and keep it on fire till it starts boiling again.

8- Serve Hot.
