You can grate a frozen Ada’s Vegan Mozzarella or Ada’s Vegan Cheddar instead of Ada’s Vegan Brie on top of the Ravioli Marinara.

Ingredients

Ravioli Dough:
– 2 1/2 cup flour
– 3/4 cup of water
– 2 teaspoons of Olive Oil
– Salt

Ravioli Filling:
Ada’s Vegan Halloumi

Marinara Sauce:
– 500g Tomato Sauce or Crushed Tomatoes
Ada’s Vegan Brie
– 1 small Onion
– 1 crushed clove of Garlic
– 1 tbsp Olive Oil
– “Italian Herbs Mix” or other Herbs of your choice (Oregano, Basil)
– 1-2 tbsp Wine (optional)
– Salt
– Black Pepper

Recipe

1- Place Ada’s Vegan Brie in the freezer for about 2 hours before you start cooking.

2- Mix the flour and salt.

3- Heap to a pile and make a hole in its center.

4- Pour water and olive oil in the center of the pile.

5- Knead the dough till it becomes smooth.

6- Shape the dough like a ball.

7- Place in the fridge for about 15 mins.

8- While the dough is in the fridge, in a pan, sauté the onion and garlic with olive oil.

9- Add in the wine (optional) and allow to reduce.

10- Add in the tomato sauce or crushed tomatoes, salt, pepper and Italian herbs mix.

11- Simmer on medium low for about 15min stirring every now and then.

12- Chop Ada’s Vegan Halloumi to turn it into tiny chops.

13- Bring the dough out of the fridge and Roll it out on a floured surface to make a fairly thin sheet.

14- Around 10 cms above the Lower edge of the dough, distribute horizontally teaspoonfuls of chopped Vegan Halloumi with a space of about 10cms between each spoonful.

15- With a brush and small bowl of water, brush the lower part of the dough we left empty and flip it over the part that contains the fillings.

16- With your finger, press the dough edge together and move between all of your fillings, pressing the dough spaces that contain no fillings.

17- With a knife, cut the pressed sides all the way through to divide the Raviolis, then with a fork, press down on the edges of each ravioli with a fork to make sure they’re perfectly closed.

18- In a large pot containing boiling salted water, let the raviolis slide in and simmer for 3-4 minutes. You’ll know they’re done once they float to the surface.

19- Remove the Floating Raviolis with a ladle and drain.

20- Place the Raviolis in a plate and pour as much Marinara sauce as you see fit on top of them.

21- Bring Ada’s Vegan Brie out of the freezer and grate it on top of the Ravioli and Marinara.

22- Serve Hot
