Vegan Cream Cheese Pudding

Nothing Beats a Cream Cheese Pudding but a Healthy and Vegan Cream Cheese Pudding! We Seriously love this dessert! it’s healthy, easy to make and children love it as much as we do!

Preparation time: 7 hours (Including 6 hours of Freezing Time)

Difficulty: Medium


Base Layer:
– 100g walnuts
– 30g almonds
– 10 dates
– 1 tbsp of apple syrup

Cheese Cream Layer:
Ada’s Vegan Brie
– 2-3 tbsps of maple syrup

Caramel Apple Sauce:
– 1 Lebanese Apple peeled, cored and diced
– 10 dates
– 1 1/2 tbsps of maple syrup
– A little warm water if required


Base layer
1- In a food processor blitz the walnuts and almonds to a powder.
2- Add the dates, apple syrup and blend until you have a thick sticky paste.
3- Turn this straight into ringed tins or pudding bowls.
4- Press firmly down ensuring that the mixture is compacted into the base.
5- Put in the freezer to firm up.

Cream layer:
1- In a bowl, add hot water to Ada’s Vegan Brie in small doses while combining with the fork to make it softer.
2- Mix the softened Ada’s Vegan Brie and maple syrup well by hand or using a mixer until you have a smooth paste fully combined.
3- Remove the base tins from the freezer and pour the Vegan Cheese mixture over.
4- Chill down in the fridge for about 6 hours before removing the ring from the tins (if using ringed tins).

Caramel and apple sauce:
1- In a food processor combine apple, dates, maple syrup.
2- Blitz until you have a coarse but well combined paste.
3- Add a bit of warm water if needed.
4- Chill.
5- Smooth this mixture over the cream cheese.
6- Decorate with walnuts and serve.
