Vegan Fajita

Extra Tips
Instead of Ada’s Vegan Mozzarella in the fajita, you can use Ada’s Vegan Brie or even Ada’s Vegan Cheddar!
All three products can work perfectly in this recipe and each would give a different specific taste and texture variation!
Ingredients
– Ada’s Vegan Mozzarella
– Ada’s Vegan Labneh
– Ada’s Vegan Cheddar
– 1 big green pepper
– 1 big red pepper
– 1 big yellow pepper
– 300 grs of okra
– 300 grs of green beans
– 300 grs of mushroom
– 1 big onion
– 2 tbsp of olive oil
– 1 cup of boiled red kidney beans
– Chipotle pepper to taste
– Fajita Seasoning Mix to taste (1 tsp chili powder, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon cumin, 1/2 teaspoon dried oregano, 1 teaspoon sea salt, 1/4 teaspoon fresh ground pepper)
– 1 tsp tomato paste
– 1 avocado mashed
– Sliced jalapeños
– Tortilla or Rice
Recipe
1- Slice green, yellow and red peppers into tall slices, and slice mushrooms, onion and green beans as well.
2- Put the olive oil in a wok on fire, and add green, yellow and red peppers in addition to onion, mushrooms, okra and green beans.
3- Mix with a wooden spoon till the vegetables start turning soft.
4- Slice Ada’s Vegan Mozzarella and add it to the mix and keep stirring till it melts with the vegetables.
5- Add boiled red kidney beans and keep stirring.
6- Add chipotle pepper, fajita seasoning mix and salt while continuing to stir.
7- Cover the wok and let the mixture simmer over low heat.
8- Keep mixing every few mins till mixture is totally homogenous.
9- Serve hot with Tortilla or Rice, along with Vegan Sour Cream, Orange Salsa, Mashed Avocado and Jalapeños.
Sour Cream:
1- Put 5 tbsp of Ada’s Vegan Labneh in a bowl.
2- Add 2 tbsp of water and stir till mixture is homegenous and smooth.
Orange Salsa:
1- In a bowl, add hot water to Ada’s Vegan Cheddar in small doses while combining with the fork to get a cheesy sauce consistency.
2- Add 2 tsp of chipotle pepper and mix content.
