Vegan Potato Soufflé

This Green, Vegan and Full of Nutrients Potato Soufflé has been put to the test with some of the hardest jury members: Picky Eaters and Children.
And they all agreed that it was simply perfect!

Extra Tips

Instead of Ada’s Vegan Brie, you can use Ada’s Vegan Mozzarella or even Ada’s Vegan Cheddar!
All three products can fit perfectly in this recipe and each would give a different specific taste and texture variation!

Of course, you can mix them up and use any combination of these three products if you’re into having a blend of cheesy tastes!

Ingredients

– Ada’s Vegan Brie
– 3 cups of broccoli florets
– 1 cup of green thyme leaves
– 1 tsp of oregano
– 1/2 tsp of cumin
– 2 tbsp of ground flaxseed
– 2 medium/large potatoes
– 2 tsp of lemon juice
– 1 tsp of olive oil
– Green Spinach Leaves
– Tomato Paste
– Dried Thyme
– 1 clove of garlic
– Oat Flour

Recipe

1- In a food processor, pulse the broccoli until it resembles rice.

2- In a food processor, pulse the green thyme leaves.

3- Mix the broccoli and the thyme together in a bowl.

4- Add the oregano, cumin, ground flaxseed to the broccoli and thyme and mix them all together.

5- Mash the potatoes with a hand masher and not with a machine, as you don’t want the potatoes to become very soft.

6- Add Ada’s Vegan Brie to the mashed potato, and mash them together again.

7- Mix the potato Brie mix with the broccoli thyme mix.

8- Add the lemon juice and the olive oil to the mix and mix again.

9- Cut the mix into two equal parts, and in a pan, spread the first part as a first layer.

10- On top of that layer, add green spinach leaves.

11- Add on top of the green spinach a mix of tomato paste, garlic and dried thyme.

12- Spread the second part of the potato mix on top of the tomato paste layer.

13- Spray some oat flour on top.

14- Put in Oven for 25 mins, 15 mins bottom heat and 10 mins upper heat.

15- Serve Hot.
