Vegan Halawet El Jebn (Mshabshaleh)
If you’ve tasted the traditional Levantine dessert Halawet el Jebn before, then you surely still crave it! the Mshabshaleh, is the Lebanese Northern version, and we’ve veganized it!

Extra Tips

Using non-refined sugar like we do, makes the Halawet el Jebn browner than the usual. If you want it to be as white as the original one is, use coconut sugar or even regular white sugar.

You can use Maple Syrup instead of making Sugar Syrup.

While serving, you can add some ground pistachios and orange flowers jam. 

Ingredients

For Halawet el Jeben:
-200 grs Ada’s Vegan Mozzarella
-1/2 cup non-refined sugar (you can use coconut, ordinary or any other sweetening alternative)
-1/2 cup of water
-1/2 cup of semolina
-1 tsp rose water
-1 tsp orange blossom water

For Sugar Syrup:
-3 cups non-refined sugar (you can use coconut or ordinary)
-1 1/2 cup of water
-2 tbsps of Lemon Juice
-1 tsp orange blossom water

Recipe

1- Slice Ada’s Vegan Mozzarella and soak in cold water for 2-3 hours to reduce the salt.

2- Put sugar and water in a pot on fire and let them boil for 10 minutes.

3- Add Ada’s Vegan Mozzarella and mix continuously till it melts and the mixture becomes well combined. Be patient for it takes time.

4- Add semolina and continue mixing for a while.

5- Add the rose water and the orange blossom water and keep mixing.

6- When the mixture is homogenous turn off the fire and allow the mixture cool for a while. 

7- Pour the mixture on top of a wax paper, pat it well with the hands to turn it into a thin layer, then tear it into small pieces and put in a dish.

8- Chill in the fridge.

9- Serve with Oriental Sugar Syrup on top. 

Oriental Sugar Syrup:

1-Place the sugar, water, and lemon juice in a saucepan over medium heat. Stir the mixture with a wooden spoon to dissolve the sugar.

2- Once it boils reduce heat to low and simmer for 7 minutes. Do not cover the saucepan.

3- Add the orange blossom water and simmer for 1 more minute.

4- Set aside to completely cool down.
